Grain Free Pizza Crust (Paleo, AIP, Vegan)   I make grain free flatbreads regularly using cassava flour.  I also make a pizza crust that I have shared before but I have been making it since so long that I have now revised the recipe a bit to make it even better!  This week I decided to do a video for that recipe (since it is so freaking delicious and I wanted to share it with my youtube followers too! ). And so I thought I need to post an updated recipe of the pizza crust here for all of you guys too!

Btw, hope you are doing ok with the lockdown that is in place.  One thing I am grateful for is that all of us in our family are able to work from home.  And I am also grateful that we have food and that we can order our groceries online. But a full house means that I am on my toes the whole day! My teenagers are constantly hungry and as a consequence, I am spending too much time in the kitchen!

Anyways, back to this pizza crust recipe. Usually I used to make this for my lunchtime when no one else would be home. But this past week I made this for my husband and I, and he just loved it! He was like – ‘oh gosh, this is so delicious!’ He couldn’t believe it was grain free..ha ha! …that’s what made me think of doing a video 🙂 Alright, let’s get to the recipe!

Important Notes and Tips:

  • This pizza crust does not have any yeast and so there is no wait time (no fermentation time) so it is ‘instant’ pizza!
  • The crust comes out thin and crispy, which I love. You could make it slightly thicker too if you prefer as I explain in my video.
  • I only recommend using Anthony’s Premium or Otto’s brand for this recipe.
  • Using hot water to make the dough makes the dough soft and the crust comes out crispy.
  • Nutritional yeast gives flavor to the dough and is optional in this recipe however I like the flavor it gives the crust.

What toppings can you add?

  • I usually like to top it with sautéed veggies and shredded chicken/deli chicken slices / cooked shrimp / leftover curry chicken
  • I do not usually make a sauce however if you like, you can make the tomato free pizza sauce that I have posted before.
  • For the ‘cheese’ part, I use sliced avocado since they are creamy and rich!
  • If you are not on AIP, you can use regular tomato sauce and maybe dairy free cashew/almond cheese.

A delicious gluten free and grain free pizza crust that is thin crust and crispy!

  1. Preheat oven to 375 F.
  2. In a mixing bowl, add the cassava flour, tapioca flour, salt, nutritional yeast, the coconut milk and olive oil. Mix using spatula and then add the hot water slowly stirring carefully. keep stirring using the spatula until all the water is absorbed by the flour. Now using your hands knead the dough until smooth. Dough should feel very soft. Add the rest of the olive oil and this will make the dough extra soft and take any stickiness away.
  3. Place the dough ball on a parchment lined large size baking tray. Flatten by Pressing the dough slowly using your fingers. Form a 12 inch round crust this way. Prick the crust all over using a fork.
  4. Slide the baking tray into the oven and bake for about 15 mins. Get the tray out and brush the crust with olive oil and slide it back into the oven for 5-7 more mins until the bottom of the crust gets golden in color and slightly crispy. The crust should be still easily foldable. Do not overcook as it will become too hard!
  5. Place toppings of your choice and enjoy!

  1. I have no idea what went wrong, but my dough was “soup” or like pancake batter and it never thickened up like a dough at all. It was so bad, I double checked all of my measuring cups and watched the video twice to see what in the world went wrong. The only thing I can fathom is that different cassava flour brands are “thirstier” than others? Unfortunately, my family got their regular pizza tonight and I had to scramble to find something else to eat. I tried to salvage the “batter” by watering it down more and pouring it into a skillet to make some thick, sticky, chewy “tortillas”

    • Hello Amanda, yes the brand of cassava flour will make a HUGE difference! I only recommend Anthony’s Goods Premium or Otto’s brands. Other brands have very different consistencies and the dough will be very different consequently. Hope you can find one of these brands and try again!

  3. This recipe is great! I made it once before and tonight, I even tried folding some tapioca “cheese” into the crust for a “cheese” stuffed crust. It turned out well too!

  4. This recipe is amazing. I didn’t need the full 3/4 cup of water at the end. I think I used maybe 1/4 cup but it came out perfect! Thank you!

  5. Just made this and we thought it was PERFECT!! Followed the recipe step by step, just didn’t need the full 3/4 cup of water, so glad we added in slowly. We topped our pizza with pesto (made with basil, evo, nutritional yeast, garlic, lemon juice, salt), black olives, prosciutto and a pile of arugula dressed with lemon and olive oil. Big success! Can’t wait to have again!

    • I have not tried with those flours so not sure how they will behave.I am guessing almond flour will be better but of course that won’t be AIP. If you do try it, lmk!

  6. Just found this recipe and am going to try it for my vegan wife this evening.
    Can this be made in advance and reheated?

    • Sorry I couldn’t respond sooner! Hope you tried the recipe. You could just make the base and bake it partially and then just before serving you could bake it again for 5-7 mins. And then put the toppings just before serving. Hope it turned out well for you!
