Indira Pulliadath,
Nutritional Therapy Practitioner
and AIP Certified Coach

From the Author:

I was diagnosed with Rheumatoid Arthritis 6 years ago and after trying several diets and therapies, I finally started on the AIP diet 4 years ago. AIP had a significant impact on reducing my pain and inflammation. It was life changing for me! And that’s why I am so passionate about it! In the last 4 years, I have created several AIP recipes and created AIP versions of traditional Indian recipes that I grew up with. AIP Indian Fusion is indeed a fusion of Indian with AIP and a fusion of AIP and Indian with modern day cuisine! One of the main motivations for me to write this cookbook was to encourage folks to try AIP! I wanted to show that it is possible to create AIP compliant dishes without compromising on taste and flavor!

“Appropriately called AIP Indian Fusion, this cookbook features a fabulous collection of AIP-compliant recipes with an Indian twist — from appetizers, curries, stews and flatbreads to delectable desserts. You’ll be inspired by new spices, novel cooking techniques and creative combinations of vegetables! With this cookbook, Indira has redefined what’s possible in AIP comfort foods, gifting us all with an amazing resource to make us feel like we aren’t missing out on anything while on the AIP!” — Dr. Sarah Ballantyne, PhD (aka The Paleo Mom) is an award-winning public speaker, New York Times bestselling author and world- renowned health expert.

“AIP Indian Fusion is a must for anyone looking to add incredible flavors and smart cooking techniques to their healing diet. Indira’s collection of Indian-inspired recipes is approachable, nourishing, and sure to be a hit with the whole family!” — Mickey Trescott, FNTP, author of The Autoimmune Paleo Cookbook

"This cookbook is an anti-inflammatory feast for the senses! With recipes unlike any others, Indira has created a cookbook that will make your kitchen sizzle with flavor and joy." — Eileen Laird, author of A Simple Guide to the Paleo Autoimmune Protocol

"As a health coach who specializes in serving the autoimmune community and teaching the Autoimmune Protocol, I've noticed one big challenge over the years . . . my clients with strong ties to ethnic food cultures feel especially isolated during the elimination phase of AIP. It can be difficult to capture unique food traditions, like Indian cuisine, on AIP, but Indira has done it with flying colors. Her new book, AIP Indian Fusion, is a delicious gift to those of us who want to heal and enjoy distinctive cultural foods. If you've been missing your favorite Indian foods, they're on the table again!" — Angie Alt, CHC, NTP, co-author of The Autoimmune Wellness Handbook

No the book is not coconut-free and is heavy on coconut and coconut oil. However, about 50% of the recipes are either coconut free or can be made coconut free. You can use any other solid cooking fat in place of coconut oil in the recipes (palm shortening, lard, or tallow will work well). In recipes that use coconut milk, you can replace that with tiger nut milk.

Yes, most of the recipes are Whole30 compliant except for the breads and desserts sections.
