Indira Pulliadath,
Nutritional Therapy Practitioner
and AIP Certified Coach
From the Author:
I was diagnosed with Rheumatoid Arthritis 6 years ago and after trying several diets and therapies, I finally started on the AIP diet 4 years ago. AIP had a significant impact on reducing my pain and inflammation. It was life changing for me! And that’s why I am so passionate about it! In the last 4 years, I have created several AIP recipes and created AIP versions of traditional Indian recipes that I grew up with. AIP Indian Fusion is indeed a fusion of Indian with AIP and a fusion of AIP and Indian with modern day cuisine! One of the main motivations for me to write this cookbook was to encourage folks to try AIP! I wanted to show that it is possible to create AIP compliant dishes without compromising on taste and flavor!

It can be difficult to capture unique food traditions, like Indian cuisine, on AIP, but Indira has done it with flying colors.
