These grain free pancakes are delish! I was not sure what to call them – ‘plantain’ pancakes or ‘banana’ pancakes since these are made of plantain flour and have bananas added in the batter ๐ Well whatever the name, these are indeed very very tasty and I love to have these for breakfast. ย Now let me warn you though that these pancakes are not as spongy as your traditional ‘flour and egg’ pancakes. There are recipes out there for grain free pancakes using plantain flour and eggs which look really good. However they are not AIP. ย And even though I have reintroduced some things back into my diet, eggs are one thing I haven’t yet reintroduced. I keep postponing that. I think it may have something to do with the fact that before I went on AIP, I was advised by one naturopath to eat a lot of eggs. And that was the time when my RA was at its worst. I somehow keep correlating all the pain and inflammation that I had at that time to all those eggs that I was eating. A subsequent food sensitivity blood test had also shown me to be highly sensitive to eggs. It is quite possible that with all the gut healing that I have been doing with my AIP diet as well as other healing strategies that I have incorporated into my lifestyle, my sensitivity to eggs could have gone away. But I am too ‘chicken’ to try those eggs LOL ๐ Maybe a couple months from now ๐
Anyways, so because of my fears, you have a recipe for an eggless grain free pancake:) My mom used to make whole wheat banana pancakes and I make those for my family. I tried to recreate that using plantain flour. These are delicious even if they are not spongy like a typical pancake. In fact I love the crispy edges and the carmelized banana pieces..yum!
I made a video too for this recipe since it is slightly tricky to make these pancakes. The consistency of the batter should be exactly right. If it is a bit too watery or a bit too thick than what I recommend, then the pancakes will not come out that good. Hence take a few minutes and watch the video before you try to make this recipe!

- 1 cup water
- 1 tbsp coconut sugar
- ¼ tsp sea salt
- about ¾ th of a banana chopped into small cubes
- ½ cup plantain flour
- coconut oil for pan frying
- Heat the water in a sauce pan. Add the coconut sugar and the sea salt. Add the banana pieces. Heat the water for about 2-3 mins until hot and turn the heat off (The water should not boil).
- Now add the plantain flour and mix using a spoon to form a smooth batter. Make sure there are no lumps.
- To make pancakes, use a non stick pan or a stainless skillet.
- Heat skillet till hot and then turn heat to medium and apply a layer of coconut oil (use extra oil for stainless steel skillet)
- When the oil is hot, pour a ladleful batter onto the pan - (do not spread it). Add a tsp of oil on the edges of the pancakes and cover and cook on low medium heat for about 2-3 mins until the edges become crispy and the pancake can be flipped easily.
- Flip the pancake and cook for one more min until the banana slices on the top are caramelized. Take off from heat and repeat until all batter is finished.
- This recipe makes 5-6 small pancakes.
Cook the pancakes on low medium heat (gas burner 5-6)

Can coconut sugar be omitted in this recipe?
yes you can omit it. That should not vary the texture.
