Banana Pancakes || Plantain Pancakes (Gluten free, Paleo, AIP, Vegan)

A delicious and moist pancake made from plantain flour and bananas that is egg free.

  • 1 cup water
  • 1 tbsp coconut sugar
  • ¼ tsp sea salt
  • about ¾ th of a banana chopped into small cubes
  • ½ cup plantain flour
  • coconut oil for pan frying
RecipeInstructions
  1. Heat the water in a sauce pan. Add the coconut sugar and the sea salt. Add the banana pieces. Heat the water for about 2-3 mins until hot and turn the heat off (The water should not boil).
  2. Now add the plantain flour and mix using a spoon to form a smooth batter. Make sure there are no lumps.
  3. To make pancakes, use a non stick pan or a stainless skillet.
  4. Heat skillet till hot and then turn heat to medium and apply a layer of coconut oil (use extra oil for stainless steel skillet)
  5. When the oil is hot, pour a ladleful batter onto the pan - (do not spread it). Add a tsp of oil on the edges of the pancakes and cover and cook on low medium heat for about 2-3 mins until the edges become crispy and the pancake can be flipped easily.
  6. Flip the pancake and cook for one more min until the banana slices on the top are caramelized. Take off from heat and repeat until all batter is finished.
  7. This recipe makes 5-6 small pancakes.
Notes
The pancake batter can get thickened upon standing at which time you can add a bit more water. But be careful not to add too much water since the pancakes will not come out good if the batter is too watery.
Cook the pancakes on low medium heat (gas burner 5-6)
