
These Tandoori drumsticks are marinated in a blend of spices and then grilled / baked to Tandoori perfection! I also got the opportunity to try pastured Chicken from US Wellness Meat. What are the ingredients you need to make these Tandoori Chicken Drumsticks?
- Red Chilli Powder or Kashmiri Chilli powder – I prefer to use Kashmiri Chilli powder as it is mildest form of red chilli and it gives the brightest color to the chicken
- Turmeric Powder – You can use any good organic brand of Turmeric powder like this one.
- Coriander Powder – You can use any good brand of coriander powder like this one.
- Cumin powder – You can use any good brand of cumin powder like this one or you can roast whole cumin seeds and powder it in a spice / coffee grinder.
- Garlic Powder – You can use any good brand of garlic powder
- Ginger Powder – You can use any good brand of organic dry ginger powder
- Himalayan Pink Salt or any sea salt – I like to use this brand of Himalayan pink sea salt
- Lime juice – You can use fresh lime juice or lemon juice
- Apple cider vinegar – I like to use Bragg’s apple cider vinegar
- Coconut Yogurt (optional) – Coconut yogurt is optional in this recipe. You can add regular yogurt if you can tolerate dairy. Adding yogurt helps to tenderize the chicken better.
- Garam Masala – Garam Masala is a blend of several different whole spices like cinnamon, cloves, black pepper etc. I like to use this brand of Garam masala
- Avocado Oil – Avocado oil or extra virgin olive oil can be used for the marination. While baking the drumsticks, I recommend using avocado oil as it is the best for high temperature grilling or baking.

- 3 tsp Kashmiri chilli powder
- 2 tsp turmeric powder
- 1 tsp garlic powder
- 1 tsp ginger powder
- 2 tsp cumin powder
- 2 tsp coriander powder
- 2 tbsp fresh lime juice or fresh lemon juice
- 1 tbsp apple cider vinegar
- 2 Tbsp coconut yogurt (or 2 tbsp water)
- 2 Tbsp garam masala powder
- 2 tsp sea salt
- 3 tbsp avocado oil
- About 3 pounds of chicken drumsticks (about 8-10 pieces), thawed to room temperature
- Avocado oil for brushing the baking pan or the grill and for basting
- charcoal pieces (optional)
- ghee (optional)
- Mix all marinade ingredients in a bowl and whisk using a spoon to form a thick marinade.
- Take each thawed drumstick and make some superficial cuts on the skin so as to let the marinade penetrate deep
- Then take a large mixing bowl and add all the marinade to it. Using your hands rub the marinade into each drumstick so as to coat them well with the spicy marinade. Let the chicken marinate at room temperature for at least 30 mins or in the refrigerator for a few hours or even overnight.
- Pre-heat oven to 450 F. Take a large baking tray and line it with foil. Brush the foil lightly with avocado oil. Then place the drumsticks in the pan. lightly brush the tops also with avocado oil.
- Once the oven reaches the temperature place the tray inside the oven on the bottom most rack.
- Bake for 25 minutes. Then take the tray out and flip each of the drumsticks to the other side and bake for another 15 minutes or so until both sides are well-cooked.
- Turn oven to broil and when it reaches broil, place the tray on the topmost rack and let the chicken broil for 3-4 mins. Then take the tray out of the oven. place a couple pieces of charcoal in the middle of the tray and pour a few drops of oil or ghee on it . Smoke will be generated. Now cover the entire tray with foil and let sit for 5 mins before serving!
