These Tandoori Chicken Drumsticks are marinated in a blend of warming indian spices and cooked to perfection in the oven. These are perfect paired with a fresh summer salad or just as an appetizer!

RecipeIngredients
For the marinade:
  • 3 tsp Kashmiri chilli powder
  • 2 tsp turmeric powder
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • 2 tbsp fresh lime juice or fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 2 Tbsp coconut yogurt (or 2 tbsp water)
  • 2 Tbsp garam masala powder
  • 2 tsp sea salt
  • 3 tbsp avocado oil
For the chicken:
  • About 3 pounds of chicken drumsticks (about 8-10 pieces), thawed to room temperature
  • Avocado oil for brushing the baking pan or the grill and for basting
  • charcoal pieces (optional)
  • ghee (optional)

Making the marinade:
  1. Mix all marinade ingredients in a bowl and whisk using a spoon to form a thick marinade.
Marinating the chicken:
  1. Take each thawed drumstick and make some superficial cuts on the skin so as to let the marinade penetrate deep
  2. Then take a large mixing bowl and add all the marinade to it. Using your hands rub the marinade into each drumstick so as to coat them well with the spicy marinade. Let the chicken marinate at room temperature for at least 30 mins or in the refrigerator for a few hours or even overnight.
Baking the Chicken:
  1. Pre-heat oven to 450 F. Take a large baking tray and line it with foil. Brush the foil lightly with avocado oil. Then place the drumsticks in the pan. lightly brush the tops also with avocado oil.
  2. Once the oven reaches the temperature place the tray inside the oven on the bottom most rack.
  3. Bake for 25 minutes. Then take the tray out and flip each of the drumsticks to the other side and bake for another 15 minutes or so until both sides are well-cooked.
Optional step':
  1. Turn oven to broil and when it reaches broil, place the tray on the topmost rack and let the chicken broil for 3-4 mins. Then take the tray out of the oven. place a couple pieces of charcoal in the middle of the tray and pour a few drops of oil or ghee on it . Smoke will be generated. Now cover the entire tray with foil and let sit for 5 mins before serving!
