
Spring brings a freshness to everything and this salad recipe is bursting with freshness! It is a vibrant colorful salad with Kale, purple cabbage and carrots. The dressing has tahini and a special ingredient – Berry Habanero jelly!

What are the ingredients in this salad?
- Mix of colorful and nutrient dense vegetables: I have used Kale, Purple cabbage and carrots but you can use any mix of fresh vegetables for your salad. A mix of greens with other crunchy vegetables is recommended.
- Lemon Juice and Extra Virgin Olive Oil: This mixture of lemon juice and extra virgin olive oil is used to massage the kale leaves so that they get softened. This is an important step if you are using kale leaves.
- Proteins: I have used canned white cannellini beans in this salad. However you can use any other beans or use shredded chicken.
- Dressing: The dressing consists of Tahini, maple syrup, garlic powder, sea salt, lemon juice, Berry habanero Jelly and water.
Spring Salad with Tahini Berry Habanero dressing

This delicious spring salad uses fresh vibrant vegetables and a lip smacking tahini habanero berry dressing!
RecipeIngredients
For the salad:
- 2 cups chopped Kale leaves
- ½ cup grated carrots (1 medium carrot)
- ¼ of a purple cabbage, shredded (about 1 cup)
- ½ of a can or organic white cannellini beans, drained and rinsed
- 2 Tbsps lemon juice
- 2 Tbsps extra virgin olive oil
- Sea salt about ¼ tsp for sprinkling
For the dressing:
- 2 Tbsps Tahini
- 1 Tbsp extra virgin olive oil
- 1 tbsp maple syrup
- 1 tsp garlic powder
- pinch sea salt
- 1 - 2 tsp Habanero Berry jelly (depending upon how much heat you can handle)
- About 2 Tbsps water
RecipeInstructions
- Add all the vegetables for the salad to a large mixing bowl. Add the lemon juice and the extra virgin olive oil. Sprinkle the sea salt on top. Now with your hands, massage the oil and lemon juice into the kale leaves. Do this for 5 minutes. Keep this bowl aside for 15 minutes.
For the dressing:
- Take a small mixing bowl and add all the dressing ingredients except the water and mix until thick. Now slowly add water 1 tsp at a time and continue to whisk until you get a creamy dressing of your preferred consistency.
Serving the salad:
- Divide the salad into individual serving bowls and pour the dressing over the salad. Add more Habanero Berry jelly on top if desired.
