How long have you been on the Autoimmune Protocol (AIP) diet? Have you been feeling like you need a good curry recipe that will make you feel pampered? Then all you need is this ‘Chicken Kofta Curry‘ which is nothing but delicious soft chicken meatballs cooked in a creamy, smooth curry sauce. Sounds so yum right? It tastes super super yum and I promise you will be licking your fingers – it’s so good:)
For the recipe, please check out my guest post over at ‘A Squirrel in the Kitchen’.
I was thrilled when Sophie Van Tiggelen from ‘A Squirrel in the Kitchen’ asked me if I would like to do a guest post over at her blog. I have always loved Sophie’s beautiful and delicious recipes and I have all of her books too. Her most recent cookbook ‘ The Autoimmune Protocol Meal Prep Cookbook’ is I think an absolute must in your library if you are new to AIP! All her recipes are so well-laid out that it is super easy to make them. She also gives you weakly meal plans along with batch cooking tips that makes it easy to stick to your plan! Plus she gives you a variety of recipes that make AIP not only ‘easy to implement’ but also ‘so incredibly tasty’! Some of my favorite recipes from her book are ‘Shrimp Pad Thai’ and ‘Chicken Pho’.
Going back to my ‘Chicken Kofta Curry’ recipe , it is simple enough to make but it makes you feel so special! So go hop over to Sophie’s website to check my post and to grab the recipe – Click here!
Thanks so much for your feedback! Makes me so happy I wish you the best of luck on your AIP journey!
Just made this on Monday, and my mom (who isn’t on AIP) loved it as well along with Indu’s shahi cauliflower pilaf! So good!! Made the pumpkin puree and coconut milk at home, and it all tasted great. The amount is just perfect and will last me the entire work week. Thank you, Indu!
