Cashew Fig Rolls || Kaju Anjeer Rolls (Refined Sugar Free, Dairy Free)

These Cashew nut rolls with a filling of dried figs (anjeer) and walnuts are absolutely delicious! They have a delicate rose flavoring that makes them super special and perfect for a Diwali treat! These are completely refined sugar free. Honey is the sweetener used in this recipe.

I have posted a Kaju Katli recipe before where I have used honey instead of refined sugar.  This recipe is a slight modification of this recipe where I am additionally using a filling made from dried figs and walnuts.

What are the steps for making this recipe?

  1. First we powder the cashew nuts using a food processor. There should not be any large coarse particles. Small coarse particles are ok.
  2. Next we make a dough using cashew nut powder, some coconut flour and hot water.
  3. Next we add some honey and rose flavor and continue to make a smooth dough.
  4. Refrigerate the dough for 15 -30 minutes.
  5. Next make the filling by cooking dried figs in ghee (or oil) and adding chopped walnuts. Blend the mixture in a food processor to get a coarsely powdered filling mixture.
  6. Spread the cashew nut dough onto a parchment sheet to form a 6 inch by 8 inch rectangle.
  7. Make a cut in the center of this rectangle so you have two 6 inch by 4 inch rectangles.
  8. Now place the filling on each rectangle along one side of it and then roll with the help of parchment paper to get a rolled up log. Place the rolled logs in the refrigerator for 1-2 hours.
  9. Take the logs out and using a sharp knife cut them into rolls of desired length.

These beautiful and delicious rolls are made from cashew nuts and have a filling of dried figs and walnuts.
RecipeIngredients
For the cashew rolls:
  • 1 cup cashew nuts
  • ¼ cup hot water
  • ¼ cup coconut flour
  • 2 tbsp honey
  • 2-3 drops of rose essence (or rose water)
For the filling:
  • ¾ cup dried figs, chopped finely
  • 2 tbsp ghee (or coconut oil for dairy free)
  • ½ cup walnuts, chopped
  • ¼ tsp cardamom powder(optional)

For the cashew rolls:
  1. Powder the cashew nuts in a food processor until fine (Make sure there are no big pieces. Process in short 10 sec pulses else you will get cashew butter). Add to a mixing bowl.
  2. Add the hot water to the bowl and stir using a spatula. You will get a sticky dough.
  3. Next add the coconut flour and mix until it's all completely mixed. Cover and let the dough cool for a few minutes.
  4. After the mixture is cool, add the honey and the rose essence. Stir to blend well and until you get a smooth dough texture.
  5. Place in the refrigerator for at least 15 minutes.
For the filling:
  1. In a heating pan add the ghee (or coconut oil) and add the chopped figs. Sir and cook for about 5 minutes until the figs are softened. Let cool for a few minutes.
  2. Blend the fig mixture with the chopped walnuts until you get a coarse mixture. Transfer to a bowl and add cardaomom powder if adding and use as filling.
To make the rolls (Best to watch my step by step video -see above):
