EASY HOMEMADE HEALTHY BARS THAT TASTE LIKE CANDY!
I had been wanting to try the trending date bars for a while! Finally made them with my changes ( ahem…enhancements😊 - used dried apricots instead of dates and made my own dairyfree chocolate to control the amount of sugar). You can totally make these AIP by using carob instead of cacao and using only tigernut butter and tigernut granola or shredded coconut. I have added AIP reintros that I can tolerate like sunbutter and walnuts! So yum and wholesome and a perfect late afternoon snack! I want to highlight tigernut butter in this recipe by @tigernutbutters that is simply delicious! BOMBAY VEG SANDWICH TURNED INTO A GLUTEN FREE VEGGIE WRAP!
Growing up I loved to eat ‘Vegetable Sandwich’ from the street vendors! In fact we had a favorite one outside our college campus! Since going grain free and AIP, I missed this sandwich a lot. So I now make it using my sweet potato paratha ( I used white sweet potato hence the white color). You can use cassava rotis / tortillas too however I prefer the sweet potato paratha as it is a little more sturdy to hold all that veggies and chutney!

The traditional veg sandwich also has fresh tomatoes which I have avoided here since I don’t tolerate them well yet. But so glad I am good with potatoes. They make the sandwich so filling and so yummy! Adding hummus ( again happy for my successful reintro with chickpeas) was my personal touch here!

Another Grain free roti / paratha recipe and this one doesn’t use cassava flour. A lot of you have asked me in the past if there is any grain free roti they can make that does not use cassava flour since cassava flour is not available in India and some other countries. So I have been meaning to share this recipe. This is a recipe that is a traditional Indian recipe used during religious fasting periods when people ( usually women) eat a grain free diet. #vrat For AIP version, use white sweet potato as potato is a nightshade. Now since I can tolerate potatoes, I use potato for this recipe.
You can add oil when cooking so it tastes like a rich paratha! Yum! Adding sweetpotato gives it sweetness and I like to eat it just like that with some coconut sugar on top!

Healthy AIP Snack! Lotus seeds or ‘phool makhana’ ( also called fox nuts) are rich in fiber, protein and other micronutrients like calcium, magnesium and iron. They are also rich in antioxidants so great to reduce inflammation.
How to eat them?
You can lightly pan fry them with a little bit of olive oil and add some sea salt and /or garlic powder.
Or you can bake at 350 F for 10 mins. I like to sprinkle some chaat masala on mine! Very tasty!

HOMEMADE CHERRY JAM!
Made this a couple weeks ago using fresh cherries we got from a friend’s home garden! I added some tart ones also to give it a sweet and sour taste.
Tart cherries are known to have anti inflammatory effects so why not right?
4 cups fresh pitted sweet cherries
1 cup fresh pitted tart cherries
1/4 tsp sea salt
1 tbsp fresh lemon juice
1/2 cup honey
In a large pan, add the cherries with the salt and lemon juice. Let cook on medium heat uncovered for about 30 minutes until all the cherries are cooked snd broken down. Then add the honey and continue to cook for another 10-15 mins until you get a thick jam texture. Let cool and transfer to an airtight container! I love to spread some on a cassava tortilla and eat and also like to mix it with my morning chia pudding!
