How do you get those little monsters to eat their veggies? Easy! – By shredding the veggies of your choice (even if not necessarily theirs) and covering them with soft cream cheese and spreading that on tortillas and making a wrap! They will be so enjoying the cream cheese that the veggies won’t even be noticed. I even throw in a kale leaf along with the lettuce and the monsters gobble it up without any complaints! And as for me – well I am just a pleased mama 🙂
So these wraps have become a recent addition to the lunch box menu in our home. Just like the sandwich roll ups which I posted a while ago. Actually these are great tasting and a tasty snack even for adults. You can add a ton of other things to it like – shredded cooked chicken or shrimp, pickled peppers, marinated artichokes, etc. etc. These are perfect to carry while traveling and for picnics and such…. So what if the warm weather has come to an end …I can still think (and talk) about picnics and day trips to beaches and barbecues and outdoor parties, right?…sigh! Talking about parties, I am bringing these delicious wraps to Fiesta Friday this week as an appetizer!

oh ok. Glad you were having a nice vacation with your family. I am ok not doing that great. Trying different things like diet restrictions etc since meds are not helping much.
Oh gosh sorry to hear that..My joints aren’t that great either, but I try not to think of it and do my own exercise like lift weights, bend at the knees etc.etc. Just read today that ghee is good for the joints?
Honestly I have been reading so much and actually getting lot of conflicting opinions that I really don’t know what to believe anymore.! yeah I have also heard that ghee can be good for the joints although dairy is supposed to be bad…
