Around the World #1: Chicken Croquettes (Croquetas de Pollo), Apple fritters and a round up


croquettes_collageDSC_0959My culinary adventures in Spanish cuisine these past few weeks have been absolutely wonderful. The family has enjoyed and appreciated every single one of the dishes made – Paella, flan, tortilla omelet, sizzling shrimp, chicken croquettes and apple fritters! I have posted the first 4 recipes and the rest 2 are in this post. Reading up about Spain and its cuisine and then making and actually enjoying these foods made us feel as if we had visited Spain already. So this will definitely bode us well whenever we do end up visiting Spain.

I have also been looking up Spanish recipes online and pinning them for trying out in the future. So I decided to do a round up here of some of these fabulous recipes for you guys since this would be my last post on Spain! Since I would like to go to another country next although I am sure I will make and continue to post other spanish recipes every now and then.  If you know of any other great recipes, please drop in a comment with the link so I can update this post with those recipes as well.

I made these chicken croquettes this past weekend and boy, were they amazing? Actually that’s what my kids labeled it – ‘amazing chicken bites’! My son who seems to have developed a keen interest lately in food judging and reviewing owing to us watching ‘Chopped’ all the time, had this to say – ” Love love love these croquettes – the combination of crispy crust and creamy, gooey chicken filling inside makes them simply irresistible and so addictive! ” Now that was a true statement since these croquettes were all gone so fast!. These are indeed a great appetizer and ( anytime snack for growing kids! ).

The apple fritters are another great snack that I tried recently and they were delicious! These could also be a great dessert if you serve it with some ice cream! So yummy!

I am bringing these delicious chicken croquettes and apple fritters to Fiesta Friday this week!

Recipe adapted from Savoring Spain and Portugal by Joyce Goldstein

Ingredients:

  • 2 large apples (Golden delicious, Gala, Fuji or Mcintosh), peeled and sliced thinly lengthwise (about 1/2 inch)
  • 2 tbsp sugar
  • 1 tsp anise liqueur (or flavored brandy)
  • 1 egg separated
  • 1/4 cup milk
  • 1 tbsp olive oil
  • 1/2 cup all purpose flour
  • pinch of salt
  • icing sugar or confectioner’s sugar
  • Extra light olive oil for deep frying

Place the sliced apples in a bowl and add the sugar and the liqueur or brandy and toss the apples well in the mixture. Let stand for about an hour at room temperature.

In another bowl, mix the egg yolk, milk, olive oil, flour and the salt until you get a smooth batter. Place the batter in the fridge for 1 hour or more.

When ready to make the fritters, heat oil in a deep frying pan.

In a small bowl, beat the egg white until they turn stiff (about 5 minutes) and mix this into the batter until well mixed. Dip the apple slices one by one in the batter and add into the hot oil and fry until golden brown on all sides.  Transfer to a plate with paper towels.

Serve the fritters hot dusting the confectioner’s sugar over the top!
