Packing school lunches for my 7 year old daughter is one of my most challenging tasks for the day. Not only does she take too long to eat (mommy, there was no time to finish it!) or invariably things fall off from her lunch box on to the floor(mommy, I don’t know how but the veggies just fell out and you told me I am not supposed to eat them right?) and so on and so forth…
So I have now come up with an easy remedy to prevent the fillings from her sandwiches to fall out. Just roll ’em up! Pretty easy and pretty neat! She loves these and has been finishing all her lunch on time too! I make different variations of this vegetable sandwich. But most common is this one with cucumber, tomato and carrots with cheese and cilantro chutney. This is a variation of the famous Bombay vegetable sandwich found very commonly on the streets of Mumbai. Simple and easy! And Perfect for the busy morning rush hour!
For the chutney, you can either buy store bought green chili and coriander chutney(available at Indian grocers) or you can make this at home and freeze it.
Recipe for Cilantro chutney
Makes about 1/2 cup of chutney
Ingredients:
1 cup fresh cilantro leaves 1/4 cup freshly grated coconut (or fresh frozen coconut that has been thawed or unsweetened coconut) 2 green chillies 1 tbsp roasted peanuts 1/4 tsp salt (or less if using salted peanuts) 1 tsp lime juice
Method:
Add all the ingredients into a food processor and use about one tbsp water to grind them well into a smooth paste.
Store in the refrigerator for up to a week or in the freezer.
Cucumber Chutney Sandwich roll up:
Ingredients: Large Whole Wheat bread or Oat bran bread slices Green Cilantro chutney (recipe given above or store bought) Salted Butter Cheese slices cucumber, tomatoes thinly sliced carrots, grated (or beets,boiled and grated) red onion,thinly sliced chaat masala (optional)
Method to assemble the roll ups:
Cut the edges of the bread slices (save them for bread crumbs or to make bread pudding!) Place them (one slice at a time )on a cutting board and roll over them with a rolling pin so that they flatten out nicely (about 2-3 times don’t make them too thin).
Now apply butter on a rolled slice. Next apply a little bit of green chutney. Next place the cheese slice.
And then place a little bit of the veggies along with a sprinkling of chaat masala(if desired)
And then slowly and carefully start rolling the bread slice (as if you are folding a carpet) until you reach the edge. Press a little on the edge to form a light seal (the chutney and butter will help that)
Cut the roll into two or three pieces as desired. Serve with ketchup.
