RECIPE:
Ingredients:
2 mini cucumbers, chopped
1/2 of a ripe avocado
1 or 1/2 green serrano or halopeno chili ( omit for AIP)
1/2 cup fresh cilantro ( use 1/4 cup for mild cilantro taste)
1/4 tsp salt
1 tbsp fresh lemon juice
1/4 cup or a little more coconut milk
Blend all together to get a smooth creamy soup!

SWEET POHA! Poha is flattened rice that you can buy from your local Indian grocery store or online.
-It is much more nutritious than rice because it undergoes less processing than rice and hence it retains its nutrients.
-Poha is rich in fiber and also iron!
- It has resistant starch which is great food for the good bacteria in our large intestine!
This is a snack my mom used to make for us when we got home from school. So delicious! I have used only natural sugar and added nuts and seeds to the recipe to make it more nutritious!
I have found that I can tolerate poha much better than rice( yes rice is inflammatory to me if I eat it a lot and so I have to limit how much I eat)

I have tried making Toum before however was unsuccessful! This recipe by @arazada worked out great! Thanks to @vid.sid for sharing this recipe on her feed which prompted me to give it a try! Thank you Vidya for also helping me do a conversion of the 7oz to a cup measure (3/4 th cup) and the recipe worked out great! Hope you guys can try it!
