A decadent chocolate sweet potato mug cake that is ready in less than 15 minutes!

RecipeIngredients
½ cup sweet potato boiled and mashed
1 tbsp cassava flour (or arrowroot flour)
1 tbsp coconut flour
½ tbsp carob or cocoa (use carob for AIP)
¼ tsp sea salt
¼ tsp baking soda
2 tbsp coconut milk
2 tbsp melted coconut oil
1 tbsp maple syrup or coconut sugar
1 tsp apple cider vinegar
¼ tsp vanilla extract (use alcohol free for AIP)
2 tbsp hot water
RecipeInstructions
In a small bowl, add the mashed sweet potato puree and all the rest of the ingredients (in the order listed above). After adding the hot water, stir well using a spoon to form a thick wet mixture.
Pour this mixture into a coffee mug or a ramekin.
Cook in the microwave for 2 mins on high(full) power.
Remove carefully from the oven and let cool for 5 minutes before serving!
