Recipe type: Dessert
Serves: 12-16
RecipeIngredients
  • ½ cup raw cacao powder
  • ½ cup melted coconut oil
  • ½ cup organic sunflower seed butter (without any added sugars or sweeteners)
  • ¼ cup raw honey (if you like it more sweet, you can add 1 more tbsp)
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • ½ cup chopped walnuts and / shredded coconut (optional)
RecipeInstructions
  1. Pre measure all the ingredients. For the coconut oil, first melt it in the microwave and then measure.
  2. In a glass mixing bowl, add all the measured ingredients. Stir to mix well. You can use a whisk or a spoon.
  3. If the mixture is lumpy, you can place the glass mixing bowl in the microwave and heat for 20 to 30 seconds. Then stir again until you get a smooth and silky mixture.
  4. Add the chopped walnuts or coconut (if adding) and stir.
  5. Pour the mixture into silicone molds and / a brownie pan lined with parchment paper. refrigerate for at least two hours.
  6. Remove form the fridge and remove from the molds or cut into squares.
  7. Transfer fudge to a glass or ceramic container and always keep refrigerated until serving.
Notes
For an AIP version, you can replace cacao with carob. And use tiger nut butter instead of sunflower seed butter. However, some brands of carob do not mix well with coconut oil. I recommend Terra souls brand. Also using palm shortening instead of coconut oil can help with uniform mixing if using carob.
