Welcoming Fall with Warm Apple Fritters

Apple unniappamHey where did summer go? Seriously, I just remember getting ready for spring and now its time for fall! One would think I would have had lot of time to enjoy the summer since, for heaven’s sake, I was on a sabbatical from work!. That should have given me plenty of time to mope around. Yeah one would think. But nope. Unfortunately my health has been on an all time low which explains partly why I didn’t really got to appreciate summer. Anyways, let’s stall that topic for until later. Like maybe never.

What we should be excited about is that fall is coming!! Yay! I love the beauty of fall and the cool weather. The only thing I do not like about fall is that winter lurks too close behind it! September also brings in the apple season here in New England and two weekends ago we went apple picking. Yup we still love to do that as a family although the kids are much older now. This year since my dad is visiting us, he joined us too. We were fortunate to get the last few of the Macintosh and Cortlands- the best ones for making apple pie.!

That same weekend my neighbor next door brought some apple fritters for us from another local farm. The kids and grandpa enjoyed them so much that I had to try making them too. I decided to follow my pumpkin donut holes recipe and also decided last minute to fry them in the paniyaram pan ( ebelskiver pan) instead of deep frying.  Oh la la, they came out fabulous and the family loved it. I made a large batch and also distributed some to our neighbors!  Yum yum! Have a fun filled fall 🙂

  • Servings: Makes about 16-20 fritters
  • Time: about 45 minutes

  • 3 Tbsp unsalted butter (melted)
  • 1/4 cup sugar
  • 1/2 cup whole milk
  • 1 large apple , peeled, chopped and pureed( about 3/4 cup puree)
  • 1/2 cup finely chopped apple pieces
  • 1 1/4 cups all-purpose flour(I used part whole wheat)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp pumpkin spice or all spice
  • 1/4 tsp cinnamon powder
Oil, for frying
For coating:
  • 1/2 cup Granulated sugar or powdered sugar
  • 2 tsp powdered cinnamon

Take a medium size mixing bowl and add the melted butter, milk, apple puree, apple pieces and the sugar.  Whisk using a hand mixer or by hand.

Mix the dry ingredients – flour, baking powder, salt and spices separately in a plate or a tray to mix them well. (Use geometric mixing or sieving to blend well.)

Finally, add the dry ingredients mixture slowly (say 1/2 a cup at a time) into the apple and butter mixture in the bowl. The mixture will be a little thick but should be of pourable consistency.

Keep this batter aside and heat a paniyaram pan (ebelskiver pan).

In a plate or tray, mix the topping ingredients together and keep ready to toss the warm fritters in them as soon as they are out of the pan.

When the pan is hot, add 1 tsp oil into each of the moulds and then pour about 1 tbsp batter into each mould. (Keep some space on top since they will rise on cooking). Cook for 2-3 minutes and then turn these fritters using skewers or a spoon to cook on opposite side. Cook for 1-2 minutes and then take them out of the pan and toss into the cinnamon sugar.


  • If your batter is too thick, then add a bit of water to it.
  • You can also deep fry the fritters

  2. These sound delicious Indu! I especially love the idea of cooking them in the ebelskiver pan instead of deep frying. Gosh, there are so many uses for that pan, I’m very tempted to look into buying one…! I hope your health picks up as well 🙂
