Summer Special: Strawberry and Chocolate Cream Cheese Ice cream Pops


icecream6DSC_0645Creamy ..Dreamy …Yummy…just fabulous!  That about describes this ice cream made with cream cheese, fresh strawberries and oreo cookie crumbs! You can’t go wrong with these ingredients can you? You may recall that last summer I had made an ice cream with cream cheese and blueberries which had won the hearts of all my family – both immediate and extended family members included! Not to mention all our friends who were also lucky to get this treat. As a consequence I made the Blueberry cream cheese ice cream several times last summer. 🙂 It was really a huge hit everywhere and was also a ‘feature’ at Fiesta Friday!

This year again the kids had been asking for that when I saw a picture of strawberry and chocolate ice cream popsicles in Better Homes and Garden’s latest issue. I was ‘bowled over’ ! Fell in love with it instantly! Had to totally make it.!  That recipe just used store bought ice cream to make the layers. However, I knew exactly what I wanted to do. I had to give it my famous cream cheese twist! 🙂

My kids helped out with the mixing and between the three of us we probably ate a good cup of the delicious mixture!

We couldn’t wait to finish our dinner that evening so we could have our dessert! And lo and behold, it turned out even better than I thought. The ice cream was so creamy and the slight sourness of the cream cheese mixed with the strawberry made the strawberry layer just so wonderful. And the chocolate of course was delicious especially with the oreo crumb layer on the bottom. Yum Yum good! Believe me folks, you have just got to try this one – you will be happy…and dreamy…and ready to take on the world! 🙂

Only one negative about this ice cream dessert is that it takes a while to thaw because of the texture of cream cheese. So you need to keep it at room temperature for about 10 minutes!

STEP WISE PICTURES

1. Place cookie crumbs and butter mixture in base of pan and press.

2. Mix cream cheese, sugar and heavy cream mixture until creamy

3. To half the above mixture, add chocolate syrup and mix well.

4. Pour chocolaté mixture over cookie crumbs.

5. Mix strawberry puree with the rest of the cream cheese mixture.

6. Pour strawberry mixture over chocolate layer.

7. Insert ice cream sticks and freeze.

8. Remove from pan and cut into squares
