101 st post , Yay! : Almond Cake and Almond Cake trifle

IMG_5475Almond Cake trifleLast week after I hit the ‘publish’ button, I realized that was my 100 th post! So much for waiting for a long time for my 100th post so I could create a special post! 🙁  Anyways then I thought 101 is a more auspicious number than 100 ..at least in India that is true! Hence you find all cash gifts at weddings and other auspicious occasions all ending in 1. Thus I began wondering what I should post for my 101st? But of course!…. the Almond Cake trifle which I have been meaning to post for last several weeks! An Almond Cake trifle certainly is worthy of an 101st post, don’t you think?

Well for one, Almonds are so healthy for you! So adding them in desserts means you could eat two servings instead of just one! LOL! ! Here’s a quick and short tutorial (Almonds 101 🙂 ) on the goodness of almonds –  Almonds are high in monounsaturated fats, the same type of health-promoting fats as are found in olive oil, which have been associated with reduced risk of heart disease. In addition to healthy fats and vitamin E, almonds are also a good source of magnesium and potassium both of which help to maintain blood pressure and promote cardiovascular health.How to best consume them? Eat them with their skin on – Whole almonds provide the most heart health benefits. You can read all you need to know about almonds here.

And now are you ready for a trifle with an almond theme? The trifle is made with an almond cake, has layers of custard and fresh fruits, has almond biscuits for crunch and then also has a liberal sprinkling of almond flakes!  So it is sure to make you healthy and happy! 🙂  The almond cake is something that I just tried recently substituting part of the flour with ground almonds and imparting a citrusy flavor with lime juice and lime zest.  So I then decided to use the almond cake for an almond themed trifle for a potluck dinner and it was such a huge hit!  I am therefore bringing this to the Fiesta Friday gang too this week! 🙂

    • yes aren’t they pretty! That’s one thing I like about trifles I think – that they look so pretty and when you bring them to a party, folks are so impressed! 🙂 And the other thing about trifles I like is that the cake is always moist because of the custard and the fruits…yumm! 🙂
