Creamy eggless custard and fruit salad

Fruit salad Yummy Yummy! … Angie from The Novice Gardener is hosting Fiesta Friday 2 this week again and I decided to bring this custardy fruit salad to the party. This is a dessert that I make often and is fabulous for parties! The fruits make it a ‘healthy’ dessert and the creamy texture of it  makes it always a huge hit with both kids and adults alike 🙂 The custard is an eggless custard and whipped cream makes it rich and creamy!

This time I used rose essence to flavor the custard and I thought it made it ethereal! Very delicate and fresh and complements the fruit salad perfectly! 🙂   You can use any combination of fresh and canned fruits. I personally love to add tropical fruits like mango, papaya and kiwis and in addition to apples,grapes and bananas. Almonds and dates additionally make it simply irresistible and may make you want to skip dinner!

Here’s the recipe. This makes about 10-12 servings (perfect for a party!)

Ingredients:
3 cups whole milk
1/2 cup cold milk
about 5  tbsps of custard powder (or plain corn starch)
1/2 cup sugar
1 cup heavy whipping cream
1/2 tsp orange zest (optional)
1/2 tsp rose essence
3 cups fruits chopped (mix of your favorite fresh and canned)
1/4 cup sliced almonds
1/4 cup chopped dates

Method:

1.In a small cup or bowl, take the cold milk and add the custard powder (or the cornstarch) and mix to form a smooth slurry with no lumps.

2.Take a medium size cooking pot and add the 3 cups milk to it and the sugar and keep on medium heat until it becomes hot (make sure you stir often to prevent burning on the bottom)

3. Now turn the heat to low and slowly add the slurry made above slowly to it stirring continuously until the milk mixture turns thick. (It should become very thick at this point(see pic below- if not then add a little more custard powder/corn starch mixed with some cold milk until it turns thick). Turn the heat off and let the custard cool.

4. Next take a medium size bowl and add the whipping cream to it and whip the cream using a hand mixer for about 4-5 minutes until it turns nice and fluffy.

5. Mix the whipped cream with the cooled custard to form a  creamy custard.

6. Add the orange zest and or rose flavor. Set the custard aside.

7. In a large bowl, add all the chopped fruits.(If using any canned fruits, make sure you drain all the juice out first).  Then add the custard mixture to this and mix well to coat the fruits.

Sprinkle chopped dates and almonds just before serving!

  1. Nice! This reminds me of the coconut fruit custard my mother sometimes makes for festive occasions – far too seldom in my opinion ofcourse 😉

  2. Indu, this reminds me of my late FIL. Custard fruit salad was his specialty. Hubby often talks about it, yet I’ve never made it. I know, I know…I’m to dense to pick up the hint.
